Boxty is a traditional Irish potato dish that is particularly associated with Leitrim and Cavan, which are counties in Ireland. It is made with potatoes, flour and milk; it's basically a fried potato pancake. It can be eaten by itself, with some meat being wrapped by it, with some side dishes, etc. Irish people ate many types of potato dishes, including colcannon, potato bread and potato apple-cakes.
Irish diet is centered on potato, and this has started ever since 18th century. Also, for a long time, poor people's only source of food was potato to survive. During the Great Famine (1847-1849), a blight destroyed the potato crop, leaving many Irish people with no food; over 1.1 million people died and 1 million emigrated. Despite the availability of many other foods in Ireland today, potato still remains as the main diet for Irish people.
